Ingredients

  • 2 teaspoons extra-virgin olive oil (or canola oil)
  • 1 1/2 pounds boneless, skinless chicken breasts, cut into small cubes (about 1/2 inch)
  • Salt and black pepper (lightly, since soy sauce is salty)
  • 3 tablespoons honey
  • 3 tablespoons low-sodium soy sauce
  • 3 cloves garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)

Instructions

1. Cut the chicken into small, even cubes and season lightly with salt and pepper.

2. Heat the oil in a large skillet over medium-high heat.

3. Add the chicken in a single layer and let it brown for a few minutes before stirring.

4. In a small bowl, stir together honey, soy sauce, garlic, and red pepper flakes (if using).

5. Flip or stir the chicken, then pour the sauce into the skillet and toss to coat.

6. Cook until the chicken is cooked through and the sauce thickens enough to coat the pieces.

7. Remove from heat and serve over rice with green onions, sesame seeds, peanuts, and a squeeze of lime if desired.

Notes

Cut the chicken into evenly sized pieces so it cooks fast and stays tender.

Avoid overcrowding the pan—browning adds flavor and keeps the texture from steaming.

If the sauce thickens too quickly, lower the heat and add a small splash of water to loosen it.
